Difficulty Level: Very Easy
Ingredients: (for 2 persons)
- 4 medium sized potatoes , peeled, cut into medium sized pieces
- 2-3 tbsp tomato paste/ tomato puree
- Tamarind Paste - 1 tsp (as per taste)
- Turmeric powder (a pinch)
- Chili paste or Red chili powder.(I used Sambal Olek)
- Cumin Powder(1/2 tsp)
- Coriander Powder (1/2 tsp)
- 1 tsp ginger paste
- 1 tbsp vegetable oil (you can also use mustard oil)
- 1-2 cup water
- Coriander leaves(optional)
- 1/2 tsp Kashmiri mirch powder for color(optional)
- Salt(as per taste)
Process
- Peel the potatoes, cut them in small pieces.
- Put oil in frying pan. Once the oil is hot, add ginger paste, cumin powder and coriander powder.
- Once they are brown, add potatoes.
- Add salt (as per taste) and turmeric powder.
- Fry the potatoes for few minutes.
- Add tamarind paste, tomato puree, chili paste/ chili powder.
- Add water in the frying pan and mix all the ingredients well.
- Put the lid of the frying pan on, and let it boil for few minutes while checking after a while.
- Once the gravy is thickened and dried, turn off the heat.
- Serve with Roti, Naan, Rice or even as snacks!
